A lighter, leaner take on Kenyan pilau using tender chicken breast and fragrant pilau masala β a one-pot weeknight winner.

Caramelise the onions slowly until deep golden; set some aside for garnish.

Brown the cubed breast briefly β do not overcook it now.

Add tomatoes, pilau masala, cinnamon and cardamom; cook until fragrant.

Stir in the drained rice to coat in spice.

Add stock, bring to a boil, then cover and cook on the lowest heat 18β20 min.
