Marinate the drumsticks in seasoned buttermilk for at least 2 hrs (overnight is best).

Mix flour with paprika, garlic powder, cayenne, salt and pepper.

Dredge each drumstick in the seasoned flour, pressing to coat well.

Fry in oil at 170°C for 12–15 min, turning, until deep golden and 75°C inside.

Drain on a rack (not paper) to keep the crust crisp.
